Instant Rice Flour Dosa


First of all sorry for that poor quality photo... This is a very easy dosa you can put together in a hurry.
I saw this recipe in 'veena's curry world' and wanted to try it then itself. Well my first attempt was a flop, figured out what went wrong and got it right in the second attempt. Now I think you can get it right in the first attempt itself if you go through my notes.
Last day I was going through my older posts and noticed that I was not posting anything you need in regular day to day cooking. So thought of concentrating on such recipes. Let me begin from breakfast recipes.

Ingredients

  • Roasted fine rice flour ( pathiri or appam flour )  -  1 cup
  • Salt  -  to taste
  • Hot water (not boiling )  -  2 cups
Method


  • Take flour and salt in a bowl add hot water little by little and make a smooth batter. It should be slightly thinner than dosa batter. Add more water if necessary. This you can add normal room temperature water.
  • Heat a pan on high flame. Pour a laddle full of batter on to the pan, no need to spread.
  • Holes will start appearing on the surface of the dosa. 
  • Reduce the heat to medium, cover and cook for 2 minutes. Then open.
  • Now flip and cook the other side for 30 seconds.
    Your dosa is ready to go with any spicy curry. 
Notes

  • When you heat water, switch off the flame when bubbles start forming on the bottom of the vessel. This is the perfect temperature for this dosa. Never use boiling water.
  • For the right consistency of the batter check by pouring a laddle onto the pan. If it spreads by itself into a some what smooth circle of medium thickness you have got it right. If it's thick it won't spread well and if it's thin you won't get round shape.
  • If you feel the batter is thin you can add more rice flour directly to the batter. 
  • If you are not using nonstick pan, smear some oil before pouring the batter. 
  • The pan should be super hot when pouring the batter or else you won't get the holes. Then you can reduce to medium or medium low if it's browning fast.
