Lemon Tea cake



I always prefer  home made cakes than bakery ones.l won't say that my cakes are perfect but sure they are better at least health wise.We are not sure about the quality of raw materials used for store bought ones and most of them use margarine instead of butter.Well there are bakeries who are strict about the quality of their products.Now a days many are into cake baking, for the above reason.


                    Many of u may be hesitant about baking...but once you now the basics its just a piece of cake. I think what you need is a good knowledge about the functions and nature of your oven and a fool proof recipe to start with.
           By nature I mean the temperature of your oven.Sometimes the temperature attained is different from that you have set on the knob ie to get a 180°c u may have to set the knob at 190 or 200 or the other way round.Its a trial n error thing, start using your oven,you will get hold of it somewhere on the way (may b u'll get an idea after 2 or 3 use).
            This recipe is good one for beginners. I got this recipe from some TV show a few years back (don't remember which show,most probably 'magic oven' ) , have made some changes to the original recipe.But you can trust,the recipe is fool proof,just follow it to the T.

Recipe for the cake

Ingredients

Maida- 1 cup
Cornflour- 4 tablespoon
Sugar (powdered)- 3/4 cup
Butter- 100 gm
Baking powder- 1 level teaspoon
Egg- 2 no's
Lemon peel- 1 heaped teaspoon
Lemon juice- 2 tablespoon
Vanilla essence- 1 teaspoon
Milk- 1/2 cup

Method

  • Preheat oven to 180°C, grease and line a 7 inch cake tin
  • Sift together maids,cornflour,baking powder and salt, keep aside.
  • Beat together butter and sugar till light and fluffy 
  • Add eggs one by one beating in between
  • Add lemon peel,lemon juice and vanilla essence, beat nicely
  • Now add the flour mixture in batches alternating with milk.Beat well after each addition
  • Pour this mixture into prepared cake tin. Tap the tin to avoid any large air bubbles
  • Bake for 40 to 45 minutes or till a screwer inserted in the center of the cake comes out clean. Start checking after 30 minutes ( baking time varies with each oven)

Recipe for butter icing 

Ingredients

Butter- 75 gm
Icing sugar or powdered sugar- 1/2 cup
Vanilla essence or lemon flavor- 1 teaspoon

Method
  • Beat butter, add sugar  in batches beating in between till light and fluffy. Adjust the amount of sugar (add a few more tablespoons if necessary) to get a smooth spreadable consistency.
Assembling the cake
  • Cut and shape the cake. Brush away the crumbs. Give an initial crumb coat with the icing 
  • Refrigerate till the crum coat is firm
  • Spread the remaining icing evenly over the cake.
  • Decorate according to your ideas.I have used lemon slices and cocoa powder.
Notes


  • If the lemon is too sour reduce the amount of juice to 1 tablespoon
  • Start icing only after the cake is completely cool
  • Wooden spatula can be used instead of blender
