Vegetable Kurma




Kurma is a very well known dish n each of you may be having one or two recipes with you.
This one is my favourite recipe.Another speciality of this recipe is that it doesnt use any masalas or whole spices not even turmeric powder.....can you believe it.....yes absolutly stomach friendly and equally tasty.

This is my mom's recipe.As a kid i used to hate chapathi, unless I have this kurma to go with it.The mild sweetness of the beetroots is what I love most in it. So whenever the beetroots are not sweet I add a little sugar to suite my taste.

Ingredients

Carrots - 2 No:s
Beetroot - 1 No
Beans - 5 to 7 No:s
Potato - 1 No
Garlic - 3 to 4 pods
Green chilly - 2 No:s
Onion - 1 small (chopped to square pieces)
Grated coconut - 1/2 to 3/4 cup
Oil - 1 tablespoon
Corriander leaves
Salt - to taste

Method

  • Cook the vegetables in water with salt 
  • Crush the garlic and chillies together and saut it in oil until the raw smell changes.
  • Grind the grated coconut well and add it to the vegetables. Add the sauted garlic and chillies to this
  • Cook till it starts to bubble,stirring occasionally
  • Add the corriander leaves and remove from heat
  • Fry the chopped onions until light brown in oil and add to the dish.


  • Notes
  • Cooking vegges n sauting the garlic n chillies should be done side by side. So that sauted garlic chilly combo should go straight into the vegges from the fry pan
  •  If u dont prefer sweetness in the gravy either omit or reduce the quantity of beatroot.
